FoodNetwork.com, Cooks.com, and many other sites offer a multitude of recipes to stimulate your imagination and tastebuds to create new taste experiences with this rare spring treat.
 
A little history about this spice and its main components will get you thinking about what you baking recipes can use to cook with it. Traditionally, it was used to preserve the meat and give bland foods some spicy flavor. There are basically three main ingredients used to make this spice: chili pepper, allspice berry, and thyme.

The Scotch Bonnet is the type of chili used in Jerk and is, arguably, the hottest chili pepper in the world. It is at least five times hotter than the jalapeno. Sometimes Scotch Bonnet peppers are hard to find in certain areas. If this is the case, you can substitute it for a jalapeno, but know that the turn out will be a bit different. Also, the spiciest part of the pepper is in the seeds, so if you want to reduce the heat, you remove the seeds.

The ground Jamaican pimento allspice berry has several different names. It is called, Pimenta dioica, myrtle pepper, or allspice. The reason why this spice is so popular in Jamaica is because it is needed to preserve the meat, and give it a unique flavor.

Use a pizza dough recipe that will hold its shape when formed and moved from the pizza peel or plate to the grill.

Honey is also a sweetener that can be used in place of sugar. It is natural and although it may crystallize, it will never spoil. You can use 2/3 cup of honey (or maple syrup) plus ¼ cup flour as a substitute for 1 cup of granulated white sugar. When baking with honey reduce your heat twenty-five degrees Fahrenheit and cook a little longer. Honey also has a tendency to darken the end product more than if you use white sugar. Since I usually keep honey on hand, I use an equal portion of honey instead of corn syrup, when a recipe calls for corn syrup.

Powdered or confectioner's sugar is very fine granulated white sugar. You can make it yourself by putting regular sugar in a coffee grinder. It is handy for icings and frostings, peanut butter cookie recipes  where quick dissolving is important. Be aware that store-bought powdered sugar has an anti-caking agent added to it. Check to see, but that agent is most likely cornstarch or wheat flour. You can use ½ cup honey plus 1 tablespoon of granulated sugar as a substitute for 1 cup of powdered sugar.
